Jairo Arcila, proprietor of Santa Monica farm, adds blackberry fruits and wine yeast to 100% Castillo coffee in anaerobic dry fermentation tanks for 72 hours. The results are something you have to taste to believe.

Jairo is a third-generation coffee farmer from Quindío, Colombia. Married to Luz Helena Salazar and father to Carlos and Felipe Arcila. Carlos and Felipe are cofounders of our exporting partner for this particular coffee, Cofinet.

While surprising in its results, the overall processing for this coffee is relatively simple. An anaerobic preferment, a de-pulping, and a traditional raised bed dry. The magic comes in when the fruit esters penetrate the cell walls of the coffee, infusing it with uncanny fruit flavors, in this case blackberry. 

This is an extremely limited, 40 bag release.
