Kyuu came to us anticipating their first brick-and-mortar location. They needed a standout menu item to complement it, something that defines their concept, an instant classic, but something that customers will want to order again and again. This is where we came in.
Starting from scratch, we focused on what the data showed: the brown sugar latte has been widely adopted as a new standard item on café menus all around the world. But how could we make this stand out and show some attention to detail using authentic, real ingredients?
We debuted the nitro brown butter brown sugar draft latte on their opening day, and it was an instant hit. The house-made brown butter syrup was perfectly balanced: silky, but avoided that movie-theatre butter taste. Paired with our proprietary nitrogenation system, we created something that isn't replicated anywhere else in the world.




Hotel properties are oftentimes a graveyard for coffee enthusiasts. The first question many patrons are keen to ask is, "Where is the good coffee in this area?" But at the Godfrey Hotel, which some consider in the heart of Corktown, you can stay put right in your room.
Built from a proprietary blend of natural and washed coffees, the Godfrey Hotel serves only the best via four La Marzocco machines on the property. When they aren't serving exceptional espresso, they hand-deliver their proprietary blend to your room in an Alessi double-walled carafe.
Their highly acclaimed restaurant, Hamilton's, serves the same blend, whether you are dining right off the street or attending a large banquet gathering. Hotels often define the heart of memorable travel experiences, so we always emphasize a strong coffee program to meet you right when you wake up.




Cafe Sous Terre started with a basement and an idea. Helmed by Reimer Preister, a highly respected real estate professional in Detroit and, recently, a multi-location hospitality professional, Cafe Sous Terre is an ode to his late grandfather, a famed jazz musician who performed with the likes of Dizzy Gillespie and other great artists.
From concept, name, branding (thanks to the great Morgan McPeak), buildout, and execution, Coffeehaus touched every corner of this cafe during the build. Cafe Sous Terre, French for "cafe underground," is now a widely renowned, highly awarded cafe and bar, originally built and operated by a Coffeehaus-scouted individual.
Cafe Sous Terre continues to push the boundaries of what a cafe can be through its exceptional bar and music program, all in line with the original concept laid out by the Coffeehaus staff.
